Donald K. Layman, is professor of nutrition in the department of food science and human nutrition at the University of Illinois at Urbana-Champaign.

Layman won the Shannon Award from the National Institute of Health and the 2009 Nutrition and Metabolism LEADERSHIP award as well. He has had his research quoted in many popular diet books, including the Atkins diet but, as Dr. Layman says...

"They take a little of my research here, and some there, and ultimately, they get it wrong."
